Computer Program Forecasts Salmonella in Pork

Salmonella has presented a real problem to factory farms of late. From eggs to turkey and everywhere in between fears are deepening. Many are made worse because some of the salmonella strains are antibiotic resistant . But according to a story on Food Production Daily , a new computer program is set to predict issues before they come down the pipeline in pork. Food Production Daily reports that a database computes conditions in various farms, specifically those that lead to the sickness. The conditions include temperature, pH, and water activity (a measure of food dryness). According to the story : Different models were then combined to give predictions on the concentrations of Salmonella at different production stages and under varying temperature, water activity and pH levels. Predictions can be made with inputs ranging from 0-30°C, 2.5 - 7 pH and 0.78-1 for water activi...
