This delicious sweet potato wedges recipe was shared with us by the lovely people at Tregothnan – they know a thing or two about tea! Ingredients: Sweet potatoes A dash of olive oil Lime zest Black pepper Darjeeling tea leaves Method: Preheat the oven to 200 degrees/gas 6. Line a baking tray with oiled tin foil to prevent sticking. In a large mixing bowl toss the sweet potato wedges with olive oil to coat. Sprinkle over the lime zest and grind the black pepper over. Sprinkle over the crushed Darjeeling leaves and toss the potatoes to ensure all are evenly coated with the spice mix. Spread the potatoes evenly on the tray and bake for 10 minutes before turning. Bake for a further 15-20 minutes until the edges start to brown and turn crisp. They should be lovely and fluffy in the centre.
