Can Restaurants Promote Healthy Eating By Offering Smaller Portions?

Unfortunately it isn't easy for restaurants to make smaller portions. I was an executive chef, and the driving factor in the size of portions is what people think they should be paying for. In America we have a huge stigma about getting what we paid for usually in regards to quantity not quality. Every time we would reduce sizes of or portions, even with a reduction in price, we got complaints. "Why would I pay for that when I can go here and get twice as much?" Restaurants only put things on the menu that people will buy, from my personal experience if someone has the choice between a 16 oz prime rib or an 8 ounce prime rib of much higher quality(both of which are far larger than you actually should eat) the customer gets the 16 oz just because to them the value is greater.
