He's taking the basic paradigm of the industrial food chain and showing how one change (going organic) degrades it. Of course it will! That's a given with pretty much any efficient industrial process: it's highly tuned to what it is, and most changes degrade its efficiency. But what if we compare the industrial food chain to what it isn't? Specifically, what about bio-intensive agriculture? It's more labor-intensive than the industrial food chain... IF you just count the guy on the tractor and ignore all the other workers who aren't in the fields. But bio-intensive agriculture is several times more acre-efficient than row crops tended by tractors. And there are other benefits, like the fact that bio-intensive agriculture has been shown to actually clean storm water rather than fouling it, like industrial-scale agriculture does.
