INGREDIENTS 2 medium-size eggplants (about 2.5 lbs) 4 small zucchini (about 1 lb) 1 tablespoon olive oil 10 ounces firm reduced-fat tofu, rinsed and drained 1 1/2 cups nonfat cottage cheese 1 1/2 cups shredded part-skim mozzarella cheese 1 cup cooked brown rice 1/2 teaspoon fennel seeds, crushed 1/2 teaspoon crushed red pepper flakes 2 1/2 cups purchased reduced-fat spaghetti sauce 2 tablespoons grated Parmesan cheese PREPARATION 1. Cut unpeeled eggplants crosswise into 1/2-inch slices. Cut zucchini lengthwise into 1/4- inch slices.
